Low Carb Shrimp Tacos

With a tangy slaw and zesty lime crema, these spiced shrimp are a flavor explosion in every bite, perfect for your next taco night!

Ingredients

For the Lime Crema:

  • 1/4 cup plain greek yogurt or sour cream
  • zest of 1 lime
  • 1/4 tsp cayenne pepper
  • juice of 1/2 lime

For the Slaw:

  • 2 cups shredded cabbage I use purple cabbage
  • 1 jalapeno pepper chopped
  • juice of 1/2 lime
  • 1 tbsp honey I used ChocZero sugar-free honey substitute
  • pinch salt

For the Easy Guacamole:

  • 1 avocado
  • 1/8 cup chopped cilantro
  • 1/4 red onion diced
  • 1 garlic clove minced
  • 2 tbsp salsa

For the Shrimp:

  • 1 lb medium shrimp
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne
  • 1/2 tsp crushed red chili flakes
  • 8 taco-sized tortillas I use Mission's Zero Carb Tortillas

Instructions

For the Lime Crema:

  • Zest the lime into a small ramekin and add the juice of 1/2 of it.
  • Add cayenne pepper and Greek yogurt or sour cream.
  • Mix until smooth.
  • Pop the crema in the fridge to let those flavors mingle while we work on the rest.

For the Slaw:

  • In a medium bowl, combine all the ingredients and toss to mix.

For the Quick and Easy Guacamole:

  • Add all the ingredients into a small bowl and mix with a fork to break up the avocado and stir until combined.

For the Shrimp:

  • In a small bowl, toss the shrimp with the salt, garlic powder, onion powder, cumin, smoked paprika, cayenne, and crushed red chili flakes.
  • Heat a large skillet over medium-high heat and add the avocado oil. Let it heat up for a minute or so until it’s nice and hot.
  • Toss the shrimp into the skillet, making sure they’re in an even layer. Let them cook for about 2-3 minutes on one side until they start to turn pink and slightly opaque.
  • Continue to cook the shrimp for an additional 2-3 minutes or until they’re fully pink, opaque, and cooked through. Be careful not to overcook them; you want them tender and juicy.

Making the Tacos

  • I like to use Mission's Zero Carb Tortillas, and toast them quickly in the skillet before putting the tacos together.
  • Add some slaw to the tortilla, top with 2 – 3 shrimp, some guacamole and the lime crema as the finisher. Enjoy!
