Healthy Crispy Chicken Caesar Wrap
- Air Fryer
For the Crispy Chicken:
- 4 oz Lightly breaded chicken chunks store-bought or homemade, I used the Costco ones
- Avocado oil spray
For the Healthy Caesar Dressing:
- 2 cloves garlic grated
- 1 teaspoon anchovy paste optional but recommended
- 1 lemon juiced
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 cup Greek yogurt I used Fage 0%
- 1/2 cup Parmesan cheese freshly grated
- Salt and pepper to taste
For the Salad:
- 2 cups Romaine lettuce chopped
- Freshly ground salt and pepper
- 1 Low-carb tortilla I like La Tortilla Factory
- 1/2 Avocado sliced
- Homemade or store-bought low-carb croutons optional
- Preheat your air fryer and spray it with avocado oil. Arrange the lightly breaded chicken chunks evenly in the air fryer basket. Spray them once more with avocado oil. Cook the chicken according to the air fryer’s instructions until they’re golden and crispy.
- While the chicken is cooking, let’s prepare the healthy Caesar dressing. In a mason jar, combine the grated garlic, anchovy paste (if using), lemon juice, Dijon mustard, Worcestershire sauce, and Greek yogurt. Shake well to blend these delicious flavors.
- Now, add a half cup of freshly grated Parmesan cheese to the dressing. Shake it again to incorporate the cheese into the creamy mixture. Season with salt and pepper to your taste, then give it one final shake. Your creamy, healthy Caesar dressing is ready.
- In a mixing bowl, add your chopped Romaine lettuce, and drizzle it generously with the prepared Caesar dressing. Toss the salad until the dressing coats the lettuce beautifully. Season it with fresh ground salt and pepper.
- To assemble your low-carb crispy chicken Caesar wrap, lay down one low-carb tortilla. Spoon a generous amount of the dressed salad onto the tortilla.
- Top the salad with slices of creamy avocado and the crispy chicken chunks that you’ve just air-fried to perfection.
- Sprinkle some more freshly grated Parmesan cheese over the chicken for that extra burst of flavor and texture. If you have homemade or store-bought low-carb croutons, crush them slightly and sprinkle them over the top for an added crunch.
- Carefully wrap your creation like a burrito, ensuring all those delightful ingredients are snug inside.
- Slice it in half if you’d like, and there you have it—a healthy low-carb, crispy chicken Caesar wrap that’s as satisfying as it is nutritious.
