Ingredients

  • 4-6 chicken thighs preferably bone-in for maximum flavor

For the Marinade:

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup coconut aminos soy sauce works as a substitute
  • 1/4 cup Worcestershire sauce
  • Juice of 1/2 lemon
  • 2 tbsp Dijon mustard
  • 1/8 cup honey I use ChocZero’s keto-friendly honey substitute
  • 2 tsp Italian seasoning
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 3/4 cup brown sugar substitute Swerve or Lakanto are my go-to choices

Instructions

Mix the Wet Ingredients:

  • In a one-gallon Ziploc bag, combine the olive oil, balsamic vinegar, coconut aminos, Worcestershire sauce, lemon juice, Dijon mustard, and honey.
  • Give the bag a gentle massage to mix these ingredients well.

Add the Seasonings:

  • To the same bag, add the Italian seasoning, salt, pepper, garlic powder, onion powder, smoked paprika, and brown sugar substitute.
  • Again, massage the bag gently to incorporate all the seasonings with the wet ingredients.

Marinate the Chicken:

  • Add your chicken thighs to the bag.
  • Seal the bag, ensuring to remove as much air as possible.
  • Massage once more to ensure the chicken is well-coated with the marinade.
  • Place the bag in the refrigerator and allow the chicken to marinate for at least 30 minutes, but up to four hours for a deeper flavor infusion.

For grilling:

  • Preheat your grill. Once heated, place the marinated chicken thighs on the grill.
  • Cook until the internal temperature of the chicken reaches 165°F.
  • During the grilling process, you can baste the chicken with some of the reserved marinade for added flavor.

For air frying:

  • Preheat your air fryer to 400°F. Place the chicken thighs in the air fryer basket, ensuring they don’t overlap.
  • Cook for about 24 minutes or until the chicken reaches an internal temperature of 165°F.
